Elvis’ Burning Love

Su-cathlon: 10 challenging games in honor of a friend’s birthday—just another competitive Saturday afternoon. There was cup stacking, BB gun shooting, Operation, Wii dance off, frisbee toss, and more. I love quirky parties with activities and prizes, although C-Man and I didn’t win any medals. (I lack good hand-eye coordination.)

I wanted to bring a halftime snack so what better energizer than Elvis’ favorite: banana, bacon, and peanut butter on toast. With sugary-spicy bacon, we called it Elvis’ Burning Love.

Ingredients:

  • 2 bananas, sliced
  • 3 T packed brown sugar
  • 1/4 tsp cayenne pepper
  • 10 slices of center cut bacon
  • 7 T peanut butter
  • 7 slices of bread (I used white wheat bread)

Preheat oven to 400°F. Line baking pan with parchment paper. Mix brown sugar and cayenne pepper in a small bowl. Place bacon, with sides touching, in pan and rub sugar/pepper mixture on bacon. Bake 10-15 minutes until bubbly and brown. Remove bacon from pan to cool for 5-10 minutes. Cut bacon into thirds or halves using kitchen scissors or a sharp knife.

Toast bread and cut into quarters. Spread with peanut butter and top with a slice of bacon and a slice of banana.

Doesn’t look too pretty, but it gave people that boost of potassium, protein, and fiber to continue the games in 100 degree heat.

(I hit the paper 2 out of 5 times, just not the target. Must train for the next games!)
