Fluffernutters and other simple, yummy foods

Fluffernutters—such a funny name for a food item, although I kept calling them flutternutters.

For the big game last Sunday, I thought I would bring this popular New England sandwich in support of the Patriots (Wikipedia said it had been proposed as the official Massachusetts state sandwich). But C-Man forgot to tell me that we were supporting the NY Giants. Whoops! Good thing, supporters from both teams seemed to enjoy them. 🙂

Ingredients:

  • White bread
  • Peanut butter
  • Marshmallows
  • Powdered sugar

This is a super easy, albeit not the most healthful, snack. I was inspired by Peter Callahan’s fluffernutters that resemble mini ice cream cones. I didn’t have a bunch of #800 pastry tips lying around to make the bread cones like he did so I went the much simpler route of using a cookie cutter.

Using a 1 3/8 inch cookie cutter or glass, cut circles out of the bread (I was able to cut 6 circles out of each slice). Toast the bread on medium in a toaster oven. Spread a layer of peanut butter on the toast. Cut a marshmallow in half to make two circles. Cover the marshmallow in powdered sugar. Place the sugared marshmallow on the peanut buttered toast.

Using a kitchen blowtorch, brown the marshmallow (this was the fun pyro part). If you don’t have a kitchen blowtorch, you can place the marshmallows on a baking sheet and broil them on high for 15-20 seconds on the top rack in your oven (about 3 inches from the broiler).

These turned out really well, and I can’t wait to blowtorch more foods!

I just love making things with basic ingredients. Below are more yummy foods that are low effort and budget-friendly.

  • Bacon-wrapped hot dogs which are all over the Garment District in downtown LA (hot dog, bacon, hot dog bun, grilled onions, ketchup)
  • Brie Tartine from the Blue Dahlia Bistro (bread, butter, brie, apricot preserves, walnuts)
  • Buckeyes by Tammy Winters from Allrecipes.com (peanut butter, butter, vanilla extract, confectioners’ sugar, semi-chocolate chips). These are always a favorite.
  • Creme Brulee by Cookalot from Allrecipes.com (egg yolks, white sugar, vanilla extract, heavy cream, brown sugar). I’ll definitely need to try this now that I have my fancy schmancy torch. 🙂
  • Rice Krispy Yogurt Cup by Peter Callahan from his Bite By Bite book, which I previously noted is a great buy, is posted by Chasing Tomatoes (butter, rice crispies, marshmallows, yogurt, berries)

    These look awesome, but what would you have made if you had gotten the team right?

  2. I use to make fluffernutters for these kids I babysat and their mom bought marshmellow spread. It was strange and pretty disgusting looking. But them kids LOVED it… and I mean LOVED it. Your minis are so much cuter. Even though we’re in New England, we rooted for the Giants 🙂
